5 Simple Summer Snacks

5 Simple Summer Snacks

The Hood Answer Mom, Elizabeth M. Ward, M.S., R.D.

It’s August, and I’m soaking up the last bit of summer like it’s going out of style – and you probably are, too! We need lots of energy to have the most fun in the sun before September starts.

Whether you’re on the go or lounging at home, snacks should be nutritious mini-meals, not meal-wreckers, which include protein-filled foods such as Hood Cottage Cheese to keep you fuller for longer and provide nutrients the body needs. Hood Cottage Cheese is available in several sweet and savory flavors, and it’s versatile and convenient enough to use in a variety of recipes, including these snacks. All of which are ready in about five minutes!

Orange Mango Cooler This creamy, refreshing drink glows like the sun. It’s not only rich in protein, but it also supplies one and a half servings of fruit! Keep a bag of frozen mango on hand to make preparation even easier.

Stuffed Avocado Stuffing an avocado with Cottage Cheese is a great way to enjoy this nutritious vegetable that supplies heart-healthy fats, as well as vitamins and minerals. It’s a satisfying snack that will keep you full for hours!

Arugula Toast Most toast combos lack protein, which can leave you hungry soon after snacking. Arugula Toast is balanced and filling because it’s made with whole grain bread, Cottage Cheese, and arugula. No arugula? Baby spinach makes a good stand in.

Lettuce Wraps Talk about a hands-on snack! Wrapping vegetables and Cottage Cheese in lettuce is a simple, satisfying way to enjoy the bounty of fresh summer produce. Use any vegetables you have on hand.

Pear and Apple Nachos Pears and apples will be plentiful starting in August! This play on nachos makes four servings, so it’s great for a small group. Kids love this balanced mini-meal.
