Bacon and Cheese Corn Muffins

• 1 cup Hood 1% Lowfat Milk
• 1 cup Hood Low Fat Cottage Cheese
• 2 eggs
• ¼ cup butter, melted
• ½ cup shredded cheddar cheese
• ½ cup real bacon bits, finely chopped
• 1 11.5-ounce cornbread and muffin mix

Preheat oven to 400˚F. Line 12 standard-size muffin cups with paper liners or coat muffin cups with cooking spray.

In a large bowl of an electric mixer, combine milk, cottage cheese, eggs and butter. Blend on medium speed for 30 to 45 seconds. Stir in cheddar cheese and bacon bits. Add cornbread mix and stir until just blended. Do not over-mix.

Spoon batter into prepared muffin cups, dividing batter equally among the 12 cups. Bake for 11 to 13 minutes or until a toothpick inserted into the middle of the muffins comes out clean.  Remove muffins from pan and allow to cool on a wire rack.
