  • 1 cup mashed banana (about 4 medium bananas)
  • 3 Tbsp. sucralose/brown sugar blend
  • 1/3 cup unsweetened applesauce
  • 2 large eggs
  • 3/4 cup Calorie Countdown Fat Free Dairy Beverage
  • 1 tsp. pure vanilla extract
  • 1 cup whole wheat flour
  • 1 cup uncooked oatmeal, plus extra for garnish if desired
  • 1 1/2 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. ground cinnamon

Preheat oven to 350 degrees F.  Coat a 9-inch loaf pan with cooking spray.

In a large bowl, whisk the banana, sucralose/brown sugar blend, applesauce, eggs, Calorie Countdown, and vanilla until well combined and creamy. 

In a separate medium bowl, whisk together the whole wheat flour, oatmeal, baking powder, baking soda, salt, and cinnamon. 

Add the flour mixture to the banana mixture and stir until just combined. Don’t overmix.

Pour the batter into the pan, and sprinkle oats over top (if desired).  Bake for 40 to 45 minutes or until a toothpick inserted into center comes out clean.

Cool completely on a wire rack. Cut into 12 slices.
