Broccoli Cheese Soup

  • 6 cups cooked chopped broccoli florets
  • 4 Tbsp. olive oil
  • 4 Tbsp. flour
  • 1 medium yellow onion, diced
  • 3 cups Calorie Countdown Fat Free Dairy Beverage
  • 1 sodium-free chicken or vegetable bouillion cube
  • 1 cup shredded reduced fat cheddar or Colby jack cheese
  • 1/4 cup Hood Light Sour Cream
  • Fresh ground black pepper
  • Chopped shelled pistachios, if desired

In a large skillet, heat the oil over medium heat.  Add the onions. Saute for 4 to 5 minutes or until nearly clear, stirring frequently.  Whisk in the flour and stir until a paste forms, about 45 seconds.

Slowly add the Calorie Countdown to the pan, continuing to stir. Add the chicken broth cube and stir to dissolve. Bring the mixture to a boil, then reduce heat. Allow the mixture to simmer for about 5 minutes, stirring constantly.   

Remove the pan from the heat. Add the broccoli and stir to combine well.  Use an emersion blender to blend to desired consistency, or transfer mixture to a food processor to blend (be careful because it will be hot) and then return to the pan.

Add the cheese and stir until melted. 

To serve, top each bowl of soup with a heaping teaspoon of sour cream, pepper, and chopped pistachios, if desired.
