Bruschetta of Cottage Cheese and Olive Tomato Caponata

• French bread, baguette, 8 slices on bias (2 oz. total)
• 1 Tbsp Kalamata olives, pitted, roughly chopped
• 1/2 cup tomato, seeded and diced
• 3 Tbsp onion, diced
• 1/2 Tbsp garlic, diced
• 1 Tbsp olive oil
• 1 Tbsp capers
• 1 Tbsp parsley, finely chopped
• 1/2 Tbsp bread crumbs
• 1/3 cup Hood® Country Style Cottage Cheese
• Salt and pepper, to taste

Preheat oven to 425°F. Lightly toast slices of baguette in oven 4 to 5 minutes or until golden brown. Lightly toss remaining ingredients in a mixing bowl and season with salt and pepper. Top each piece of toast with about 1 tablespoon of the tomato mixture.

Serving suggestion: Makes a great appetizer when served with a tossed salad and finished with cracked black pepper.
