Chicken Verde Lettuce Wraps

  • 1 lb. tomatillos, husked and rinsed
  • 2 garlic cloves
  • 1 lb. chicken breasts (or thighs)  
  • 1 bunch chopped cilantro 
  • 3/4 cup chicken broth
  • 3/4 cup Hood® Sour Cream
  • 2 avocados 
  • 1 head butter lettuce
  • 2 cobs of fresh corn
  • Salt to taste

Broil the tomatillos and garlic cloves until slightly charred, turning once, about 10-15 minutes.

Peel the garlic and halve the tomatillos.

Place chicken, tomatillos, garlic, chicken broth, slices from 1 onions and a few stalks of cilantro into a slow cooker, and cook on low for 7-8 hours.

After cooking, remove chicken and shred. 

Pour remaining contents of slow cooker into the blender. Add sour cream, up to 1/4 c. cilantro and large chunks from 1 avocado. Stir until smooth, and add salt to taste. 

Combine chicken with half of the sauce, adding more bit by bit until it's moist.

Slice remaining avocado, and then add some chicken, avocado, onion, and corn to each lettuce leaf.
