Cool & Creamy Red Potato Salad

INGREDIENTS:

• 3 pounds baby red bliss potatoes, unpeeled and washed
• ½ medium red onion, peeled and diced
• 1 cup Hood® Sour Cream
• Salt and fresh ground black pepper, if desired
• 8 strips bacon, cooked until crispy, and broken into ¼-inch pieces
• 1 Tbsp., plus 2 tsp fresh chopped chives

Chop potatoes into ½-inch pieces.  Place potatoes in a large pot.  Cover with water.  Bring to a boil over high heat. Reduce heat to low and simmer uncovered until potatoes are just fork-tender, about 15 minutes.  Do not overcook. Drain potatoes and cool completely.  

Place potatoes in a large serving bowl.  Add onion and sour cream.  Stir the mixture together until thoroughly combined.  Season with salt and pepper, if desired.  

Refrigerate the potato salad for at least 2 hours. 

Before serving, add bacon to bowl with potatoes and stir to mix.  Sprinkle potato salad with chives.
