Creamy Chicken and Mushroom Pasta

  • 12 oz farfalle pasta
  • 3 tbsp olive oil
  • 1 1/2 lb sliced mushrooms
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 cups shredded cooked rotisserie chicken
  • 1 cup reduced-sodium chicken broth
  • 1/4 cup heavy cream
  • 1 cup frozen peas
  • 1 cup Hood® Sour Cream
  • 1/4 cup finely chopped fresh parsley
  • 2 tsp finely grated lemon zest
  • 1/3 cup grated Parmesan cheese 
DIRECTIONS:

Cook pasta according to package directions. Drain and reserve 1/2 cup cooking liquid.

Meanwhile, heat oil in large skillet set over medium heat; cook mushrooms, onion and garlic, and half of the salt and pepper for about 8 minutes until mushrooms are starting to brown. Stir in chicken; cook for 1 minute. Stir in broth and cream; bring to boil. Cook for about 2 minutes or until chicken is heated through.

Add reserved pasta and cooking liquid, peas, and remaining salt and pepper to skillet; toss to coat well. Remove from heat. Stir in sour cream, parsley and lemon zest. Sprinkle with Parmesan cheese; serve immediately.

TIP: Use a medley of mushrooms, such as cremini, oyster or shiitake, if desired.
