Easy Stuffed Artichoke Bottoms

40 canned artichoke bottoms, drained and patted dry

1 cup Hood Sour Cream

1 cup finely grated Pecorino Romano or Parmesan cheese

3T chopped fresh chives (reserve 1 tsp for garnish)

2 tsp. jarred minced garlic

2 tsp. fresh lemon juice

3 tsp. lemon zest (finely grated lemon rind)

½ tsp. freshly ground black pepper, or more if desired

6 T. jarred chopped pimento, drained and patted dry

Preheat oven to 375˚F.

Line two baking sheets with parchment paper. Arrange the artichoke bottoms on the baking sheets. Set aside.

In a medium mixing bowl, combine the sour cream, cheese, garlic, lemon juice, lemon zest, black pepper, pimentos and chives. Mix well.

Fill each artichoke bottom with about 1 tablespoon of the sour cream mixture.  Bake for 20 minutes.  Remove from oven and garnish with a sprinkling of reserved tsp of chives.  Serve warm.
