Eggnog Rice Pudding

• 3/4 cup long grain white rice 
• 1/2 tsp. salt 
• 1 1/2 cups water 
• 1 quart Hood® Golden Eggnog  
• 1/4 tsp. ground nutmeg 
• 1/2 cup dried sweetened cranberries

DIRECTIONS:

In a large saucepan, bring the water and salt to a boil. Add the rice. Cover, and simmer over low heat until the water is absorbed, about 15 to 20 minutes. Add the eggnog and nutmeg and cook over medium heat, stirring often, for about 30 minutes or until the mixture becomes thick. Do not overcook.

Remove from heat and stir in cranberries. Serve warm or cold. Top each serving with 2 tablespoons whipped cream, if desired.
