Preheat oven to 400˚F. Coat a 2-quart baking dish with cooking spray.

Add cottage cheese to food processor or blender and blend on high until smooth, about 45 seconds. Set aside.

Steam the green beans. Do not overcook. Set aside. 

In a large skillet, heat 1 tablespoon oil over medium heat. Add the onions and mushrooms, and cook for 2 to 3 minutes. Add the garlic, thyme, and pepper and stir to combine. Cook for 3 more minutes or until mushrooms are soft. Add the flour and cook for another minute, stirring constantly. 

Add the Calorie Countdown to the pan and stir. Cook until sauce thickens, about 4 to 5 minutes, stirring constantly.  

Remove pan from heat and add the green beans. Stir to coat the green beans with the sauce. Transfer green beans to the baking dish. 

In a small bowl, combine bread crumbs and 2 teaspoons of oil. Sprinkle evenly on top of the green bean mixture. 

Bake for 15 minutes. Allow to cool for 5 minutes before serving.
