  • 2 Tbsp. canola oil
  • 2 medium shallots, peeled and thinly sliced
  • 8 ounces sliced white button mushrooms
  • 2 large eggs
  • 1 cup Simply Smart 1% Lowfat Milk  
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. fresh ground black pepper 
  • 1 cup shredded Gruyere cheese, divided 
  • 3 ounces sliced deli ham, cut into 1-inch pieces, divided

Preheat oven to 400˚F.

Generously grease a 9-inch pie plate. 

In a medium skillet, heat the oil over medium heat. Add the shallots and mushrooms and sauté until the mushrooms are soft, about 5 minutes.  Remove the pan from the heat. 

In a medium bowl, whisk together the eggs, milk, flour, baking powder, salt, and pepper.

To assemble, layer half the cheese and ham into the prepared pie plate.  Slowly pour the egg mixture into the pie plate. Sprinkle with remaining cheese and ham. 

Bake for 15 to 18 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack for at least 5 minutes before serving.
