Heirloom Tomato Gazpacho

INGREDIENTS:

  • 5 heirloom tomatoes
  • 1/2 red bell pepper, deseeded
  • 1/2 English cucumber, peeled
  • 1/4 jalapeno, deseeded
  • 1/2 small shallot
  • 2 Tbsp. lemon juice
  • 3 dashes hot sauce
  • 3/4 tsp. kosher salt
  • 1/2cup Hood® Heavy Cream
  • Basil and parsley to garnish
DIRECTIONS:

Dice tomatoes, pepper, cucumber, jalapeno and shallot. Toss with lemon juice, hot sauce and salt. Let marinate in the refrigerator overnight.

Blend mixture until smooth. Place in medium sauce pan and heat until just warm. Do not boil.

Stir in Hood® Heavy Cream and adjust with more salt, hot sauce or lemon to taste.

Garnish with herbs and serve immediately.
