  • 1 cup Simply Smart 1% Lowfat Milk
  • 1 cup chunks plain frozen mango
  • 1 cup frozen plain pineapple
  • 1/4 cup lime juice
  • 1/2 tsp. grated, peeled fresh ginger, optional 
  • 2 Tbsp. toasted coconut
DIRECTIONS:

Place the milk, mango, pineapple, lime juice, and ginger in a blender or food processor. Blend until smooth, about 1 minute. Pour into two glasses, top with coconut, and serve immediately.

PREP TIP: Toast coconut in a small skillet over medium high heat. Stir constantly for about 3 to 5 minutes or until slightly browned.
