Mashed Potato Casserole

  • 3 pounds potatoes, peeled and cubed
  • 1/2 cup Hood® Sour Cream  
  • 1/4 cup milk
  • 1/4 cup butter, softened
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 4 strips bacon, cooked and crumbled
  • 1/2 cup sliced green onions

Topping:

  • 1/2 cup panko bread crumbs
  • 3 Tbsp. grated Parmesan cheese
  • 1 Tbsp. melted butter
DIRECTIONS:

Preheat oven to 350°F. Place potatoes in large saucepan of cold water; bring to boil. Reduce heat to simmer; cook for about 15 minutes or until potatoes are fork-tender. Drain and return to pot.

Mash potatoes with sour cream, milk, butter, salt and pepper; stir in bacon and green onions. Transfer to buttered 8-inch square baking dish.

Topping: Toss panko with Parmesan cheese and melted butter; sprinkle over casserole. Bake for about 30 minutes or until heated through. Broil on high for about 1 minute or until top is golden and crisp.

TIP: For cheesy potatoes, stir 1 cup shredded aged Cheddar cheese into the casserole.
