No-Bake Chocolate Oatmeal Energy Bites

INGREDIENTS:

  • 2 cups sugar
  • 1 cup Simply Smart 1 % Lowfat Milk  
  • 10 Tbsp. unsweetened cocoa powder
  • 2 tsp. vanilla extract
  • 2 cups crunchy peanut butter 
  • 6 cups quick-cooking oats, raw
  • 2/3 cup finely chopped peanuts

In a medium saucepan, combine sugar, milk, and cocoa powder over medium heat. Bring to a boil. Cook, whisking constantly, for 2 minutes.  Remove from heat.  Stir in vanilla extract.

Add peanut butter and oats to a large mixture bowl. Add the sugar/milk mixture.  Stir, combining well.  Divide batter into 48 pieces and roll into balls. Roll each ball into chopped peanuts.  Let cool until hardened. Refrigerate until ready to eat.  

Prep Tip: Use Simply Smart Fat Free Chocolate Milk in place of plain for an even richer chocolate flavor.
