Pumpkin Muffins

  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 cup mashed ripe banana
  • 1 cup plain unsweetened pumpkin
  • 1/4 cup canola oil
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 2 cups Calorie Countdown Fat Free Dairy Beverage
  • 1/2 cup chopped pecans, optional

Preheat oven to 350˚F. Coat 12 muffin cups with cooking spray.

In a large mixing bowl, combine the oatmeal, brown sugar, salt, baking powder, cinnamon, and nutmeg. Set aside.

In another large mixing bowl, whisk together the banana, pumpkin, oil, eggs, and vanilla extract until well combined. Add the Calorie Countdown and combine. 

Pour the banana mixture into the oats mixture. Add the pecans. Stir well to combine. 

Fill the muffin cups to the top with batter. 

Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean.  Let the muffins set in the pan for 5 minutes. Remove the muffins and cool on a wire rack.
