Sour Cream Mashed Potatoes

Peel the potatoes, leaving some skin on and cut into quarters. Place in a large pot of salted cold water and bring to a boil over medium-high heat. Cook until fork tender, about 20 minutes. Drain well. 
 
In the same pot, add the sour cream, half & half and butter to the potatoes. Mash with a hand held potato masher until creamy or desired smoothness. Season with salt and pepper to taste and garnish with chopped green onions. Serve immediately. 

Cooking Tips:
  • Add crunchy bacon or chives to the mashed potatoes to create a "loaded" version. 
  • Refrigerate any leftovers, covered, for up to 3 days. To reheat, add more half & half and season with salt & pepper, if needed, over low heat until desired consistency.
