Three-Cheese Mac 'N Cheese

  • 3 cups uncooked whole grain macaroni, such as shells or penne rigate
  • 6 tsp. unsalted butter
  • 3 Tbsp. all-purpose flour
  • 1/2 tsp.salt
  • 1/4 tsp. ground black pepper
  • 1 1/4 cup Calorie Countdown 2% Reduced Fat Dairy Beverage
  • 3/4 cup shredded part-skim mozzarella cheese 
  • 3/4 cup shredded reduced-fat sharp cheddar cheese

Preheat oven to 375 degrees.  Coat a 2-quart square baking dish with cooking spray. 

Cook macaroni according to package directions. Drain well. Set aside.

In a medium saucepan, melt butter over medium heat. Whisk in flour, salt, and pepper until combined. Add Calorie Countdown, whisking until smooth. Cook and stir until thickened and bubbly, about five minutes, stirring constantly. 

Add the mozzarella cheese and cheddar cheese to the saucepan and combine well.  Add the macaroni, and stir until coated. Transfer the macaroni mixture to the baking dish. 

Combine all the ingredients for the topping in a small mixing bowl. Stir well.  Sprinkle evenly on top of macaroni mixture.

Bake 18 to 20 minutes, or until top is golden brown.
