Cool & Creamy Red Potato Salad

- 3 pounds baby red bliss potatoes, unpeeled and washed
- 1/2 medium red onion, peeled and diced
- 1 cup Hood® Sour Cream
- Salt and fresh ground black pepper, if desired
- 8 strips bacon, cooked until crispy, and broken into ¼-inch pieces
- 1 Tbsp., plus 2 tsp fresh chopped chives

DIRECTIONS:directionsChop potatoes into ½-inch pieces. Place potatoes in a large pot. Cover with water. Bring to a boil over high heat. Reduce heat to low and simmer uncovered until potatoes are just fork-tender, about 15 minutes. Do not overcook. Drain potatoes and cool completely.
Place potatoes in a large serving bowl. Add onion and sour cream. Stir the mixture together until thoroughly combined. Season with salt and pepper, if desired.
Refrigerate the potato salad for at least 2 hours.
Before serving, add bacon to bowl with potatoes and stir to mix. Sprinkle potato salad with chives.
