6 Simple Pasta Dinners, No Oven Required

When you're busy, getting dinner on the table every night can be difficult. I’ve rounded up six delicious pasta dinners that you can make on the stovetop with very little fuss. Here’s why I love each of them.

Cauliflower Mac & Cheese

The cauliflower in this macaroni and cheese adds vegetables, and there’s a good chance the kids won’t even notice.  A serving supplies hefty portions of protein and calcium, as well as great taste! Serve with a simple green salad.  

Inside Out Lasagna

You won’t even know there’s only a pound of lean ground beef in this recipe because the vegetables and blended cottage cheese stretch the beef to provide even more eating satisfaction.  In a rush?  Swap in store-bought pasta sauce. Pair with steamed broccoli.  

Mediterranean Pasta

The spinach, sun-dried tomatoes, feta cheese and garlic in this dinner will have you dreaming of dining in a sun-drenched seaside café! Serve with fruit salad. 

Cheesy Chicken and Artichoke Pasta

No need to dine out when you have this recipe at your fingertips.  With two type of cheese and artichokes, this dish may seem extravagant, but trust me, it’s affordable, never mind delicious! Add steamed asparagus and you’ve made a meal.

Shrimp Scampi 

Elegant and easy. That sums up this shrimp scampi dish. You can skip the wine and use chicken or seafood broth instead. I like a lot of garlic, so I use at least double what the recipe calls for!  Serve with a green salad. 

Creamy Fettuccine with Mushrooms 

Cottage cheese combined with a hint of Hood Half & Half is the reason for the creaminess in this dish that goes together in minutes. Swap chopped red bell pepper or a combination of other summer vegetables for the mushrooms, if you like. I like this dish with a green or fruit salad.
