Berry Breakfast Pizza

INGREDIENTS:ingredients•1 cup Hood Low Fat Cottage Cheese•2 large eggs•1 Tbsp. lemon juice•½ cup rolled oats•3/4 cup Hood Milk•1 ¼ cups all-purpose flour•¼ cup brown sugar•¼ cup sugar•1 ½ tsp. baking powder•½ tsp. baking soda•½ tsp. salt•2/3 cup fresh berries•Powdered sugar, optional

Preheat oven to 350˚F.
Coat a 9-inch glass pie plate with cooking spray.
Place cottage cheese in a blender or food processor and blend until smooth, about 45 seconds. Add the eggs and lemon juice and blend for another 15 seconds or until combined.
In a small mixing bowl, mix the oats with the milk.
In a large mixing bowl, combine the flour, sugars, baking powder, baking soda, and salt.
Add the cottage cheese mixture to the oats mixture and stir until well combined. Add that to the flour mixture and stir until all the ingredients are just combined. Do not overmix.
Transfer the batter to the pie plate. Sprinkle the berries on top.
Bake for 25 to 30 minutes or until a toothpick inserted in the middle comes out clean. Allow to cool on a wire rack.
To serve, top with powdered sugar, if desired.
Prep tip: Store breakfast pizza for up to 5 days in an airtight container. Reheat in microwave oven for 20 to 30 seconds or in toaster oven for 5-8 minutes.
