Eggnog Pancakes

- 2 cups all-purpose flour
- 2 Tbsp sugar
- 2 tsp baking soda
- 2 tsp baking powder
- 1 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup Hood® Low Fat Cottage Cheese
- 1 cup Hood® Golden Eggnog
- 1 cup Hood® 1% Lowfat Milk
- 2 large eggs
- 4 Tbsp butter, melted

DIRECTIONS:directionsIn a large mixing bowl, combine flour, sugar, baking soda, baking powder, nutmeg, and salt. Reserve. Place cottage cheese, eggnog, milk, eggs, and butter in a food processor. Blend until combined, about 45 seconds. Add the cottage cheese mixture to the flour mixture and stir until just combined, but still slightly lumpy.
Coat griddle with cooking spray and heat to medium high heat. For each pancake, pour 1/4 cup batter onto griddle and spread batter to form a 5” pancake. Cook 3 to 5 minutes, until bubbles appear on the surface. Turn pancakes over with a spatula and cook 2 to 4 minutes longer to brown the other side.
