Maple Cream Pie Squares

  • 2 cups walnuts, finely ground
  • ¼ cup butter, melted
  • 2 Tbsp. sugar
  • ¼ cup cornstarch
  • ¼ tsp. salt
  • 3 ¾ cup Hood Heavy Cream, divided
  • ¾ cup plus 2 Tbsp. pure maple syrup 
  • 2 large egg yolks
  • 2 Tbsp. butter
  • Chopped walnuts for garnish, if desired

Preheat oven to 325˚F.

To make the crust, combine the walnuts, melted butter and sugar in a medium bowl, then press the mixture firmly and evenly into an 8” X 11” baking dish. Bake for 10 - 12 minutes. Remove from oven and cool on wire rack. 

To make the filling, combine cornstarch and salt in a large saucepan. Add ½ cup of cream and whisk until smooth. Slowly add another 1 ¼ cup of the cream and ¾ cup of the maple syrup while whisking the mixture. Cook over medium heat, whisking constantly, until the mixture has thickened and tiny bubbles form. Reduce heat to low and cook for another minute while stirring. Remove pan from heat. 

In a small mixing bowl, beat egg yolks lightly. Slowly add a small amount (about ¼ cup) of the hot filling to the egg yolks and whisk immediately. (This tempers the egg yolks and prevents them from curdling.) Slowly add egg yolk mixture to the filling in the saucepan, whisking constantly while doing so. Bring the mixture to a gentle boil and cook for two minutes. 

Remove the pan from the heat. Add butter and stir until melted. Cool the mixture, uncovered, in the pan to room temperature (about an hour). Do not stir. 

In a large chilled bowl, beat the remaining 2 cups of cream and 2 tablespoons of maple syrup until stiff peaks form. Fold half the cream into the cooled filling and spoon the mixture onto the crust, spreading it evenly in the baking dish. Cover and refrigerate for at least 8 hours. Refrigerate the remaining whipped cream mixture. 

Before serving, frost with the whipped cream mixture, slice and garnish with chopped walnuts, if desired.
