No-Bake Dark Sweet Cherry Cheesecake Cups

- 2 ½ cups crushed thin chocolate wafers or chocolate graham cracker crumbs
- 4 oz. reduced-fat cream cheese, softened
- 1 ½ cups Hood Low Fat Cottage Cheese
- ½ cup powdered sugar
- 3 ½ cups fresh, pitted cherries, or frozen, pitted, thawed cherries, well-drained, divided

Place cookies in food processor and process into crumbs. Remove the crumbs from the food processor and set aside.
To make the filling, place the cream cheese in the food processor and blend until smooth, about 3 to 5 minutes. Add the cottage cheese and powdered sugar and process for another 30 seconds or until completely combined.
Add 1 ½ cups cherries and process for another 30 to 60 seconds. The filling may become lumpy, but don’t overmix. Remove the mixture from the food processor and set aside.
To make the topping, add 2 cups of cherries to the food processor and blend until smooth, about 1 minute.
To assemble, evenly divide the cookie crumbs in the bottoms of eight small clear bowls or glasses, making sure crumbs are evenly distributed on the bottom. Add equal amounts of the filling to each of the bowls or glasses and smooth the top. Add the pureed cherry mixture on top of each cheesecake cup, and smooth if desired.
Serve immediately or cover and refrigerate until ready to eat.
