No-Bake S'mores Bars

Crust

  • 12 sheets plain graham crackers (or about 1 ½ cups fine graham cracker crumbs)
  • ½ cup butter, melted 

Filling

Topping

  • ½ cup Hood Heavy Cream
  • 1 cup marshmallow crème 
  • ½ tsp. pure vanilla extra
  • 1 ½ cups miniature marshmallows 
  • ¼ cup mini semi-sweet chocolate chips, optional

Coat the bottom and sides of an 8-inch square baking pan.
 
Place graham crackers in a food processor and process until they become fine crumbs. In a medium bowl, mix the crumbs with the melted butter. Press the mixture evenly into the prepared pan. Set aside.

Make the pudding according to package directions but use only 1 ¾ cup milk. Pour the pudding over the graham cracker crust, spreading evenly. Refrigerate for 30 minutes. 

Meanwhile, make the topping. Using an electric mixer, whip the heavy cream until stiff peaks form, about 2 minutes. Do not overbeat. Add the marshmallow creme and vanilla extract, and mix on high speed until blended, about 1 minute. Cover and refrigerate.

When the pudding has set (about 30 minutes), spread the topping evenly on the pudding layer. Top with the marshmallows, and toast marshmallows under the broiler for 1 minute, if desired. Sprinkle chocolate chips on top, if desired, and serve immediately.
