Red Pepper Broccoli Mini Quiche image

Ingredients

  • 2 large eggs
  • 2 large egg whites
  • 3/4 cup Calorie Countdown Fat Free Dairy Beverage
  • 1 1/2 cups cooked broccoli florets, chopped fine
  • 1 cup diced red bell pepper
  • 1 1/2 cups shredded Swiss cheese
  • pinch cayenne pepper, or more if desired
  • 1/4 tsp. fresh ground black pepper, or more if desired

Directions

  • STEP 1

    Preheat oven to 400˚F. Coat 10 muffin cups with cooking spray. Set aside.

  • STEP 2

    In a large bowl, whisk the eggs, egg whites, and Calorie Countdown together. Stir in the broccoli, red pepper, Swiss cheese, cayenne pepper, and black pepper. Divide the mixture evenly between the muffin cups, filling them to the top.

  • STEP 3

    Bake until firm, about 20 minutes. Remove from the oven and place on a wire cooling rack for 5 minutes. Remove from the pan and cool for 10 minutes.
