Savory Breakfast Waffles

INGREDIENTS:ingredients
- 1/2 lb thick-cut bacon, cooked in the oven
Herb Cheddar Waffles
- 2 cups all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground pepper
- 2 large eggs, room temp
- 1 1/2 cup Hood Light Cream
- 2 tbsp olive oil
- 1 1/2 cup sharp cheddar cheese, grated
Maple-Infused Cream Sauce
- 1 cup Hood Light Cream
- 2 tbsp maple syrup or maple sugar
- salt and pepper, to taste
- 1/4 cup water, mixed with 1 tbsp cornstarch
To serve
- 4 eggs, fried
- 1 avocado, thinly sliced

Preheat oven to 350 degrees F and place bacon on a tray. Bake for 12-15 minutes, depending on thickness of bacon.
While bacon cooks, mix all of the waffle ingredients together until well incorporated. Preheat the waffle iron.
In a small sauce pan, simmer the light cream and seasonings. Once slowly simmering, add the water and cornstarch mixture, whisking quickly. Reduce heat to low and keep warm for serving.
To serve, make waffles per usual. Fry eggs and top waffles with friend egg, cooked bacon, sliced avocado, and drizzle maple cream sauce over everything. Add an extra touch of black pepper or micro greens for color and flavor, and some red pepper chili flakes for heat (optional).
Serve immediately and enjoy!
