Sour Cream-Marinated Fried Chicken

INGREDIENTS:ingredients• 8 chicken breasts, skinless
• 3/4 cup Hood® Sour Cream
• 1/2 cup Hood® 1% Lowfat Milk
• 1 tsp. garlic powder
• 1 cup bread crumbs
• 2 Tbsp. parsley
• 1/2 cup potato chips, finely crushed
• 1 cup vegetable oil for frying
• Salt and pepper, to taste

Preheat oven to 375°F. Pound chicken thin. In a large bowl, combine sour cream, milk, and garlic powder. Place chicken in the bowl and cover. Marinate in the refrigerator for at least 1 hour. In a medium mixing bowl, combine bread crumbs, parsley, and crushed potato chips.
Remove chicken from sour cream marinade and press firmly into the bread mixture, completely coating the chicken. Repeat for each piece.
Heat the vegetable oil in a frying pan over medium heat until hot. Carefully place chicken into the oil and cook on each side until golden brown. Remove from oil and place on a paper towel. Season lightly with salt and pepper.
Finish cooking chicken by placing on a baking sheet in the oven for 8 to 10 minutes or until it reaches an internal temperature of 160°F.
