Sun-Dried Tomato Shrimp Fettuccine

  • 1 pack 16oz fettuccine pasta
  • 2 tbsp olive oil
  • 1 1/2 lb large shrimp
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 can 15oz diced tomatoes
  • 1/2 cup Hood Sour Cream
  • 2 cups fresh spinach
  • 1 pint sea salt and pepper
  • 1/2 tsp red pepper flakes

Cook pasta according to package instructions. Drain pasta reserving 1 cup pasta water. Set aside.

In a large skillet, heat the oil. Add the shrimp and garlic and saute for 5-7 minutes or until shrimp is no longer pink, stirring half way through. Season with salt and pepper.

Add sun-dried tomatoes, can of diced tomatoes and sour cream. Stir to combine. Turn heat down to low and let it simmer for 5 minutes.

Add half of the pasta water and spinach, stir. If needed add remaining pasta water to thin out the sauce according to preference.

Toss in pasta and top with red pepper flakes and fresh parsley. Serve
