Veggie Stuffed Baked Potato

INGREDIENTS:ingredients• 4 large potatoes, baked
• 2 cup Hood® Low Fat Cottage Cheese
• 4 cups steamed, chopped mixed vegetables, such as broccoli and red bell pepper
• Ground black pepper, to taste
• 1 tsp. onion powder
• 1/4 cup 50% Less Fat Real Bacon Bits
• 1 cup reduced fat Cheddar cheese, shredded

DIRECTIONS:directionsPreheat oven to 400˚F. Sliced potato lengthwise, leaving the underside of the potato intact. Carefully scoop out potato, leaving about ¼ inch of the pulp inside the shell. Place the potato pulp in a medium mixing bowl and mash. Add the cottage cheese, vegetables, onion powder and bacon bits. Combine well. Place potato shells on a baking sheet. Spoon equal amounts of the potato mixture into each potato shell. Top each stuffed potato with ¼ cup cheese. Bake for 15 minutes or until cheese is slightly browned.
