Pumpkin Pecan Baked Oatmeal

•       1 15-ounce can pumpkin puree

1/3 cup pure maple syrup

2 large eggs

1 tsp. pure vanilla extract

1 ½ cups Hood 1% Low Fat Milk

2 ½ cups oats, uncooked

½ tsp. ground cinnamon

¼ tsp. ground ginger

¼ tsp. ground nutmeg

½ tsp. salt

¾ tsp. baking powder

½ cup chopped pecans

½ cup raisins

Preheat oven to 375˚F.  Coat a 8x8-inch baking pan with cooking spray. 

In a large mixing bowl, whisk together the pumpkin, maple syrup, and eggs. Add the milk and combine well.  In a medium mixing bowl, whisk the oats, cinnamon, ginger, nutmeg, salt, and baking powder. Stir in the pecans and raisins.  

Add the pumpkin mixture to the oats mixture and stir until all ingredients are combined. 

Pour the mixture into the pan and smooth the top.  Bake for 35 to 40 minutes or until the center is firm to the touch.  Remove from the oven and cool on a wire rack. Store leftovers in the refrigerator for up to one week.
