Egg, Ham and Mushroom Quiche

- 2 Tbsp. tub margarine
- 2 medium shallots, peeled and thinly sliced
- 8 ounces sliced white button mushrooms
- 2 large eggs
- 1 cup Hood® 1% Lowfat Milk
- 1 cup all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 cup shredded Gruyere cheese
- 3 ounces sliced deli ham, cut into 1-inch pieces

DIRECTIONS:directionsPreheat oven to 425˚F.
Generously grease a nine-inch pie plate.
In a medium skillet, melt margarine over medium heat. Add shallots and mushrooms and sauté until the mushrooms are soft. Remove the pan from the heat.
In a medium bowl, whisk together eggs, milk, flour, baking powder and salt.
To assemble, layer half the cheese and ham into the prepared pie plate. Slowly pour egg mixture into the pie plate. Sprinkle with remaining cheese and ham.
Bake for 20 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack for at least five minutes before serving.
