4 Recipes to Savor Summer Foods

It’s August, and I’m prepared to enjoy every last bit of what summer has to offer this month, especially when it comes to food.  The abundance of fresh fruit and vegetables at this time of year has me thinking about the most delicious ways to prepare them.

Blueberry Blast Milkshake is my latest summertime food creation. This seasonal goodie combines fresh, juicy blueberries, Hood Milk and Hood Maine Blueberry & Sweet Cream Ice Cream in a fun treat that you can feel good about. Each serving has as much calcium as a glass of milk, protein to help keep you fuller for longer, and a good source of fiber.

Here are some of the other summertime favorites that I’m making this month:    

Corn in Cream with Cherry Tomatoes 

My garden is overflowing with cherry tomatoes. I usually just eat them directly off the vine, but I’ll save enough to make this irresistible side dish that showcases fresh corn, and features the creamy goodness of Hood Cream infused with basil and chive. Yum!

Watermelon Salad

Watermelon’s lends just the right amount of sweetness and crunch to this salad that also features Kalamata olives, sweet onion, and mint.  It’s a welcome break from the daily green salad I typically serve, and it’s certainly more interesting! I’ve swapped out some of the feta cheese for Hood Low Fat Cottage Cheese to reduce the fat and calories without sacrificing taste.  

Tomato, Cucumber and Fresh Mozzarella Salad with Green Goddess Vinaigrette 

What better way to use all those ripe, red tomatoes from the farmer’s market or your own garden? No worries if you don’t have an English cucumber. Use whatever type you have on hand.  Small mozzarella balls reduce preparation time, and the delicious vinaigrette  dressing make this salad too good to pass up!
