5 Easy, Delicious Recipes for Mother’s Day

Mother’s Day is on the horizon and you’re probably thinking about the best gifts for all the moms in your life. As the mother of three, I don’t go in much for fancy presents to celebrate on Sunday, but I do adore breakfast in bed. This year, I actually helped my kids out, in a way, by coming up with a recipe that everyone loves, and will be easy for them to make while I lounge under the covers waiting for my food!

Confession: I am a donut lover.  I like just about every kind of donut from honey dipped to a glazed chocolate crueler. I enjoy donuts while I’m eating them, but I don’t like the way they make me feel afterwards - weighed down by too much fat and sugar. 

Glazed Raspberry Sour Cream Donuts have the right amount of sweetness, and, as I mentioned above, they’ve already passed the Kid Test in our household.  They’re so delicious that nobody will even miss the white flour, or the fact that they’re baked and not fried, making them every bit as good for you as two pieces of toast with a bit of butter and jam, but far more exciting to eat. 

We don’t live by Glazed Raspberry Sour Cream Donuts alone, of course. Here are some other simple recipes that pair well the donuts and won’t weigh you down before you begin Mother’s Day, which I hope is full of fun, relaxation, and a minimum of cooking!

Chive Scrambled Eggs are so simple and delicious that they barely need a recipe. Adding cottage cheese to eggs amps up the protein so that you’ll feel fuller for longer. 

Egg, Ham, and Mushroom Quiche is a fuss-free dish, mainly because there is no crust involved. Just mix up all the ingredients and bake! Makes for delicious leftovers, too. 

Crepes with Fresh Fruit Salad only sounds like a time-consuming meal. In truth, the crepes are a simple-to-prepare vehicle for delicious fresh fruit.  

Turkey Apple Cranberry Salad can be made ahead of time. It’s the perfect combination of meat, dried fruit, nuts, and vegetables that’s a satisfying and delicious part of any Mother’s Day menu, whether it’s brunch, lunch, or a light dinner.
