Asparagus and Swiss Cheese Strata

- 1 Tbsp. olive oil
- 1/2 cup diced onion (about 1/2 medium)
- 1/2 cup diced red bell pepper (about 1/2 large)
- 1 medium baguette, cut into 1-inch pieces (about 5 cups)
- 1 cup cooked* asparagus, cut into 1-inch pieces
- 1 1/2 cups finely shredded Swiss cheese, divided
- 5 large eggs
- 2 cups Simply Smart 1% Lowfat Milk
- 1 Tbsp. Dijon mustard
- 1/2 tsp. salt
- 1 tsp. fresh ground black pepper
- 2 Tbsp. fresh snipped chives, divided evenly

Coat a 2-quart baking dish with cooking spray.
Heat oil in a medium skillet over medium heat. Add the onion and pepper and saute until softened, about 3 to 5 minutes. Remove onion mixture from heat.
Place the bread, asparagus, half the onion mixture, and 1 cup cheese in the baking dish.

In a medium bowl, whisk the eggs, milk, mustard, salt, black pepper, and 1 tablespoon chives. Pour over the bread mixture in the baking dish. Top with the remaining ½ cup cheese and onion mixture.
Cover and chill for at least four hours and up to 24 hours. Preheat oven to 350˚F. Cook, uncovered, for 45 to 50 minutes or until lightly browned on the top and set in the center.
* Aspargus can be steamed, roasted, or microwaved.
