Blueberry Pie

  • 1 box premade pie dough or your own family recipe
  • 1 cup + 1 tablespoon granulated sugar, divided
  • 3 tablespoons cornstarch
  • 1/4 cup water
  • 5 cups fresh or frozen blueberries, divided
  • 4 tablespoons salted butter, divided
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • Hood Natural Vanilla Bean Ice Cream

Use one roll of the pie dough to line a 9-inch pie plate, use a fork to ventilate the dough and bake according to package instructions.

Add 1 cup of the sugar, cornstarch, and water to a large saucepan and cook over medium heat until sugar dissolves. Add 3 cups of blueberries to the sugar mixture and bring to a boil, stirring frequently. Boil for approximately 2 minutes until sauce thickens.

Remove the mixture from heat and stir in 2 tablespoons butter, lemon juice, and zest the remaining ingredients. Pour into prepared pie crust. Place in the fridge to set if not top crust is desired, or use the other pie crust sheet to cut 1/2-inch thick strips and top the pie in a lattice pattern. 

Melt the other 2 tablespoons for butter and brush on the crust and sprinkle with 1 tablespoon of sugar before baking according to package instructions.

Let cool or chill for 1 hour before serving.

Serve with Hood Natural Vanilla Bean Ice Cream.
