7 ½ cups chopped raw broccoli (about 3 large heads)

3 ½ cups cooked, cubed chicken breast

1 Tbsp. butter

1 Tbsp. canola oil

2 cloves garlic, minced

¼ cup chopped onion

¼ cup all-purpose flour

1 cup reduced-sodium chicken broth

1 cup Hood Calorie Countdown 2% Reduced Fat Dairy Beverage 

8 ounces shredded reduced-fat Swiss cheese

¼ cup seasoned breadcrumbs


Steam or microwave broccoli until just crisp. Do not overcook. Rinse with cold water, drain, and set aside.

Preheat oven to 350˚ F. Coat a 9 x 13-inch baking dish with cooking spray.

Heat a large skillet over medium heat. Add the butter and melt. Add the canola oil, garlic, and onion. Saute for 1 minute.  Sprinkle the flour in the pan and combine with the butter mixture. Add the broth and Calorie Countdown and whisk, breaking up any lumps. Bring the mixture to a boil, stirring constantly.  Remove the pan from the heat and stir in half of the Swiss cheese.  Season with fresh ground black pepper, and salt, if desired.

Place the broccoli in the casserole dish, and pour half of the sauce on top, distributing it evenly.  Layer the chicken on top and cover with the remaining sauce.  Sprinkle the remaining Swiss cheese on top, then the breadcrumbs.

Bake for 15 minutes, or until cheese has melted. Serve warm.
