Christmas Morning Baked Oatmeal

- 2 cups quick-cooking oatmeal, uncooked
- 1/2 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 1 1/4 cups Hood® Golden EggNog
- 1/2cup chunky applesauce
- 1 tsp pure vanilla extract
- 1 egg, beaten
- 1/2 cup dried sweetened cranberries or other dried fruit
- Hood® Instant Whipped Cream

Preheat oven to 350˚F. Coat a 8” x 8” baking dish with cooking spray. In a large mixing bowl, combine the oatmeal, brown sugar, cinnamon, nutmeg, and salt. Reserve. In a medium mixing bowl, combine the eggnog, applesauce, vanilla extract, and egg. Add the eggnog mixture to the oatmeal mixture. Add cranberries and stir until combined. Pour the mixture into the baking dish. Bake for 28 to 30 minutes or until set. Allow to cool. To serve, cut into 6 pieces, and top with whipped cream.
