Ingredients
- 2 cups cooked quinoa
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped green bell pepper
- 12 cherry tomatoes, cut in half
- 1 cup Hood® Cottage Cheese
- 1 Tbsp. olive or canola oil
- 1 Tbsp. plus 1/2 tsp. apple cider vinegar
- 1/2 tsp. honey
- 1/8 tsp. prepared Dijon mustard
- 1/8 tsp. dried oregano
- 1/8 tsp. salt

STEP 1
In a large serving bowl, combine the quinoa, red and green bell pepper, tomatoes, and cottage cheese. Mix well.

Make the dressing. In a small mixing bowl, whisk together the olive oil, vinegar, honey, mustard, oregano and salt. Pour the dressing over the quinoa mixture, toss, and serve.
