Baked Potato Pops

INGREDIENTS:ingredients
- 24 baby potatoes (about 1 inch in diameter)
- 2 tbsp olive oil
- 1/2 tsp salt and pepper
- 3/4 cup shredded Cheddar cheese
- 1/2 cup Hood® Sour Cream 12 oz Squeeze Bottle
- 4 slices bacon, cooked and finely chopped
- 2 green onions, thinly sliced

Preheat oven to 400°F. Toss together potatoes, oil, salt and pepper; arrange in single layer on parchment paper–lined baking sheet. Bake for 20 to 25 minutes or until golden brown and tender. Let cool slightly.
Preheat broiler and position rack in center of oven. Thread potatoes on cocktail skewers; return to baking sheet. Sprinkle evenly with cheese. Broil for 2 to 3 minutes or until cheese melts and potatoes are heated through.
Arrange potato skewers on serving platter; drizzle with sour cream. Sprinkle with bacon and green onions.
TIPS:
If potatoes are too big, halve before baking.
For a vegetarian option, sprinkle with diced roasted red pepper.
