Blueberry Protein Waffles

Ingredients
- 1 1/2 cups Hood® Country Style Cottage Cheese
- 3 large eggs
- 1 Tblsp canola oil
- 5 Tblsp Hood® Whole Milk in the LightBlock Bottle
- 3 Tblsp honey
- 1 tsp. vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. cinnamon, optional
- 3/4 cup blueberries
Directions

STEP 1
Make the topping. Add the cottage cheese, ½ cup blueberries and honey to a blender or food processor. Blend until smooth, about 20 to 30 seconds. Set aside.

STEP 2
Make the batter. Add cottage cheese, eggs, canola oil, milk, honey, and vanilla to a blender or food processor. Blend until smooth, about 30 to 45 seconds.

In a medium mixing bowl, combine the flour, baking powder, salt, and cinnamon. Add ¾ cup of blueberries and toss until combined.

Add the cottage cheese mixture to the flour mixture. Stir until just combined. Don’t overmix. Add 1 to 2 tablespoons of milk if mixture is too thick to pour.

Preheat waffle iron. Coat with cooking spray. For each waffle, pour about ¾ cup of batter and spread evenly in the waffle iron. Cook waffles for 3 to 5 minutes or until golden brown.

To serve, top two waffles with equal amounts of the topping, and maple syrup, if desired.
