Broccoli Fritters with Cottage Cheese

Ingredients
- 2 large eggs
- 1/3 cup flour
- 1/4 cup finely grated Parmesan cheese
- 1/4 cup shredded cheddar cheese
- 1/2 small onion, diced
- 1 tsp. minced garlic
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 3 cups cooked broccoli florets
- 3/4 cup Hood® No Salt Added Low Fat Cottage Cheese

STEP 1
Preheat oven to 400˚F. Line a large baking sheet with parchment paper.

Place the eggs, flour, cheeses, onion, garlic, salt, and black pepper in a large food processor. Mix until combined, about 1 minute.

Add the broccoli and pulse about 5 to 7 times until well combined, leaving broccoli in about ¼-inch pieces.

Form 8round fritters by measuring out ¼ cup of the batter, and placing it onto the parchment paper. Coat fritters lightly with olive or canola oil cooking spray.

Cook for 8 minutes. Flip, and spray the other side with cooking spray. Cook for another 8 minutes.

Place cottage cheese in food processor and blend until smooth, about 45 seconds.

Serve warm fritters topped with cottage cheese.
