Chicken BLT with Basil Chive Sour Cream
- 1 pound boneless, skinless chicken breast, sliced thin
- 16 slices bacon
- 1/2 cup Hood® Sour Cream
- 1 Tbsp. chopped fresh basil
- 1 Tbsp. chopped fresh chives
- 2 tsp. lemon juice
- Fresh ground black pepper to taste
- 8 slices sourdough or other bread, lightly toasted
- 4 lettuce leaves
- 4 tomato slices
Coat a grill pan with cooking spray. Cook chicken over medium-high heat. When done, reserve and keep warm.
Meanwhile, cook bacon. When done, place on a plate with paper towels to collect any excess grease. Reserve and keep warm.
In a small bowl, combine the sour cream, basil, chives, lemon juice, and pepper. Mix well. Reserve.
Spread 4 slices of bread with equal amounts of the sour cream mixture. Top with sliced chicken, lettuce, tomato, and bacon. Top with remaining bread. Serve immediately.
