Chive Scrambled Eggs
- 1/2 tsp olive oil
- 2 large eggs, beaten until light and foamy
- 1/4 cup Hood® Cottage Cheese with Chive
- 1 Tbsp salsa
- 1 tsp chives, finely chopped
- Freshly ground black pepper
Heat 1/2 tsp olive oil in a non-stick pan over medium high heat until hot. Pour in eggs. As eggs begin to set, reduce heat to low. Gently pull the eggs across the pan with a spatula, flipping the eggs as you pull, forming large soft curds of egg. Continue cooking and slowly flipping eggs until the eggs are cooked to desired doneness and no liquid egg is visible.
Remove eggs from heat and place on a small plate. Top with cottage cheese, salsa, chives and freshly ground black pepper.
