Cottage Cheese Breakfast Pizza
- 1 lb premade pizza dough
- 1 cup Hood® Country Style Cottage Cheese
- 1 cup shredded mozzarella and cheddar cheese
- 8oz turkey breakfast sausage, cooked and crumbled
- 2 cups of shredded hash browns thawed
- 2 tablespoons vegetable oil
- 6 large eggs whisked
- 2 tablespoon parsley
- Salt and pepper
Preheat oven to 400°F and line a baking sheet with parchment paper.
Roll out pizza dough and pre-bake the crust for 8-10 minutes until lightly golden.
In a medium non-stick pan over medium high heat, add 1 tablespoons of vegetable oil cook shredded hash browns until lightly golden brown, about 5-7 minutes. Set aside.
In the same medium non-stick pan over medium heat, add 1 tablespoon of vegetable oil. Add eggs and cook and stir until the eggs until thickened and scrambled. Season with salt and pepper and set aside.
To assemble, spread the Hood Country Style Cottage Cheese evenly over the crust leaving a 1 inch border around the pizza. Sprinkle mozzarella and cheddar evenly over the cottage cheese. Spoon scrambled eggs, turkey breakfast sausage crumbles, and hash browns.
Bake until cheese is melted, about 5-7 minutes.
