Cottage Cheese Jalapeno Poppers image

Ingredients

  • 12 jalapeno peppers
  • 1 cup Hood® Cottage Cheese with Chive
  • 3 slices turkey bacon
  • 1/3 cup cheddar cheese shredded
  • 1/2 teaspoon garlic powder
  • 1/2 cup panko breadcrumbs, divided

Directions

  • STEP 1

    Preheat the oven to 425°F

  • STEP 2

    Cook turkey bacon. Allow it to cool and cut into small pieces.

  • STEP 3

    Cut jalapenos lengthwise and remove the seeds and ribs from each pepper.

  • STEP 4

    In a medium bowl, combine Hood Cottage Cheese with Chive, cheddar, turkey bacon pieces, garlic powder, and ¼ cup panko breadcrumbs. Stir until well combined.

  • STEP 5

    Fill jalapeno halves with cottage cheese filling. Sprinkle remaining panko breadcrumbs on top.

  • STEP 6

    Arrange the stuffed jalapenos in a single layer on a baking sheet lined with parchment paper. Bake for about 13-15 minutes until golden on top.
