Cottage Cheese Jalapeno Poppers

  • 12 jalapeno peppers
  • 1 cup Hood® Cottage Cheese with Chive  
  • 3 sliced of turkey bacon
  • 1/3 cup cheddar cheese shredded
  • 1/2 teaspoon garlic powder
  • 1/2 cup panko breadcrumbs, divided

  1. Preheat the oven to 425°F
  2. Cook turkey bacon.  Allow it to cool and cut into small pieces.
  3. Cut jalapenos lengthwise and remove the seeds and ribs from each pepper.
  4. In a medium bowl, combine Hood Cottage Cheese with Chive, cheddar, turkey bacon pieces, garlic powder, and ¼ cup panko breadcrumbs.  Stir until well combined.
  5. Fill jalapeno halves with cottage cheese filling.  Sprinkle remaining panko breadcrumbs on top.
  6. Arrange the stuffed jalapenos in a single layer on a baking sheet lined with parchment paper. Bake for about 13-15 minutes until golden on top.
