Creamy Cheddar Broccoli Soup

Ingredients
- 4 Tbsp. butter
- 1/4 cup minced onions
- 4 Tbsp. all-purpose flour
- 2 cups chicken broth
- 1 1/2 cups Hood® Milk (Whole or your preference)
- 2 cups fresh broccoli chopped
- 1 cup shredded cheddar cheese
- 1/2 cup Hood® Sour Cream

Melt the butter in a large saucepan over medium heat. Add the onions and sauté 4 to 5 minutes until translucent, stirring frequently. Whisk in flour and stir until a rough paste forms.

Reduce the heat to medium and add the broccoli. Cook for 10 minutes until broccoli is tender. Using an emersion blender, blend until about half of the broccoli. Add the cheese. Cook until the cheese is melted, about 1 to 2 minutes. Remove from the heat and stir in the sour cream. Add salt and pepper to taste, if desired.
