Creamy Herbed Mashed Cauliflower image

Ingredients

  • 1 large head of cauliflower, chopped
  • ½ cup Hood Whipped Cottage Cheese
  • ¼ cup grated Parmesan cheese
  • ½ tsp. salt
  • 1 Tbsp. chopped fresh chives
  • 1 Tbsp. olive oil, optional

Directions

  • STEP 1

    Cook cauliflower until fork-tender.

  • STEP 2

    Add cauliflower to large food processor and blend until almost smooth, about 2 minutes.

  • STEP 3

    Add Hood Whipped Cottage Cheese, Parmesan cheese, and salt to the food processor.

  • STEP 4
    Blend for another 1 to 2 minutes, or until completely smooth.
  • STEP 5

  • Transfer to a serving bowl. Garnish with chives, and olive oil, if desired.
