Creamy Herbed Mashed Cauliflower
- 1 large head of cauliflower, chopped
- ½ cup Hood Whipped Cottage Cheese
- ¼ cup grated Parmesan cheese
- ½ tsp. salt
- 1 Tbsp. chopped fresh chives
- 1 Tbsp. olive oil, optional
Cook cauliflower until fork-tender.
Add cauliflower to large food processor and blend until almost smooth, about 2 minutes.
Add Hood Whipped Cottage Cheese, Parmesan cheese, and salt to the food processor.
STEP 4Blend for another 1 to 2 minutes, or until completely smooth.
Transfer to a serving bowl. Garnish with chives, and olive oil, if desired.
